Simple Cheesecake with Eggs and Spinach

While the dough is thawing, simmer the washed and dried spinach leaves with a drop of olive oil until they wither.
Combine the ingredients of the filling: ricotta and other types of cheese, stewed spinach and an egg. Add a pinch of salt. If necessary, ricotta can be replaced with a more common and affordable product - ordinary cottage cheese of medium fat content, which is preliminarily squeezed well through cheesecloth.
Roll out the dough into a layer about 3 cm thick and divide into two unequal parts: place the large one on the bottom of an oiled and floured form (20 cm in diameter) so as to cover the walls. Spread the cheese filling evenly on top and make three indentations with a spoon.
A smaller portion of the dough will serve as a "lid" of the pie, which is fastened to the edges of the base, and the excess is trimmed off. Make a cross-shaped notch in the center of the cake to release excess liquid and brush over the remaining olive oil on the cake.
