Overripe cucumber salad for the winter

Ingredients
- Overripe cucumbers 1 kg
- Tomatoes 300 g
- Carrots 300 g
- Sweet pepper 300 g
- Onions 300 g
- Vegetable oil 150 ml
- Tomato paste 2 tbsp spoons
- Salt 1 tbsp. a spoon
- Dry hot peppers to taste
- Sugar 1 tsp a spoon
- Garlic 7-8 cloves
- Vinegar 9% 4 tsp spoons
Cooking method
Remove the skin from the cucumbers and remove the pitted pulp if hard.
Grate cucumbers, tomatoes and carrots on a coarse grater. Cut the pepper into small pieces, chop the onion.
In a skillet, heat ¼ oil over medium heat. Fry the onions for 4-5 minutes and transfer to a saucepan with the tomatoes.
Add a little more oil to the same pan and fry the carrots for 4–6 minutes, transfer to the tomatoes and onions.
Do the same with pepper, and then cucumbers.
Add tomato paste to vegetables, salt and stir. Simmer over low heat for 20 minutes after boiling.
Add hot pepper, sugar and chopped garlic 5 minutes before cooking.
Remove vegetables from heat and stir in vinegar.

Spread the salad in sterilized jars with a total volume of one and a half liters and close the lids. Cool under a blanket or blanket, and then keep cool.
