Oven-baked stuffed carp

Bake the stuffed carp in the oven. It turns out to be unusually tasty and satisfying, because the filling contains pork, fried vegetables and fish fillets.

Ingredients
- Carp 1 piece
- Onions 1-2 pieces
- Carrots 1 piece
- Vegetable oil 2 tbsp. spoons + for lubrication
- Pork 300 g
- Baton 2 slices
- Eggs 3 pieces
- Salt to taste
- Ground black pepper to taste
Cooking method
Clean the fish, gut and remove the gills.
Make an incision near the pelvic fin between the skin and the meat. Use your hand to gently separate the skin. Carefully separate the fin with a knife so that it remains on the skin.
Separate the skin on the other side in the same way.
At the level of the anal fin, cut the ridge with kitchen scissors. Turn out the skin and cut out the remaining part of the ridge in the tail, leaving no more than 2 cm.
Continue pulling the skin off the fish towards the head. Help yourself with scissors in the dorsal fin area.
When you get to the head, cut the ridge with scissors and separate the peeled carcass from the head. Examine the skin, carefully remove the remains of bones and meat.
Remove the fish fillets from the bones.
Cut the onion into medium-sized pieces. Grate the carrots on a coarse grater.
Heat oil in a skillet over medium heat. Fry the onions and carrots for 4-5 minutes. Cool slightly.
Cut the pork into pieces and mince twice with fish fillets, fried vegetables and small pieces of loaf.
Add eggs, salt and pepper to the minced meat. Stir.

Sew the fish skin along the belly with a doubled thread to about the middle. Fill the carp with minced meat and sew up to the head.
Make stitches at a distance of about a centimeter and a half.
Use a needle to make holes in the skin to prevent it from swelling during baking.
Place the fish in a greased dish. Bake the carp first for 5 minutes at 200 ° С, and then for another 50-60 minutes at 190 ° С.
