Watermelon Peel Jam

Watermelon rind jam is an original, very simple and delicious dessert. Now not a single piece of juicy berry will be wasted.

Ingredients
- Watermelon peel 1 kg
- Baking soda 3 tsp spoons
- Water 600 ml
- Sugar 1½ kg
- Lemon 1 piece
- Vanillin to taste
Cooking method
Cut off the green skin from the watermelon rinds (only the white part should remain) and cut them into small pieces (3-4 cm).
Dissolve the baking soda in 3 liters of water and place the crusts in the resulting solution. Leave them to soak overnight. Rinse thoroughly with clean water in the morning.
Next, cook the sugar syrup: 600 ml of water for 600 g of sugar. When the syrup starts to thicken, dip the crusts in it, bring to a boil and cook for another 30 minutes over low heat.
Then turn it off and leave to infuse for 5-8 hours.
Then add the remaining sugar, bring to a boil again and cook for half an hour. Leave it on for another 5-8 hours. Repeat the procedure a third time. At the end of the third boil, add lemon juice and vanillin.
When the jam has cooled, pour it into sterilized jars and store in a cool place.
