Classic clafoutis with cherry

Cherry Clafoutis is a French dessert similar to a pie, casserole and egg mousse. It is dense and tender, like baked cream. The berries add sourness to it.

Ingredients
- Cherries 500 g
- Sugar 100 g + 1 tbsp. the spoon
- Butter 50 g + for lubrication
- Eggs 4 pieces
- Vanilla sugar 10 g
- Milk 300 ml
- Flour 120 g
- Powdered sugar to taste
- Almond extract ¹⁄₂ tsp spoons

Remove pits from cherries. This can be done using a special device, a wooden stick or a pastry nozzle.
At home, in France, clafoutis is made from pitted cherries: they give the dish an almond flavor. But eating such a cake is not very convenient and safe. Therefore, if you want to get closer to an authentic recipe, add ½ teaspoon of almond extract to the dough.
Sprinkle the berries with a tablespoon of sugar. Wait for the juice to come out and drain.
Lubricate a ceramic or glass dish with butter and put the cherries in an even layer.
Prepare the dough separately. Whisk the eggs with the remaining 100 g of sugar, vanilla sugar and 100 ml of milk.
Then add flour in portions and mix thoroughly each time.
Finally add 50g melted butter and remaining milk and beat with a mixer on low speed. The dough should turn out to be liquid, like for pancakes.
Pour the dough over the cherries and place them in an oven preheated to 180 ° C for 30 minutes.
Cool the finished clafoutis and garnish with powdered sugar.
