Dumplings with onions and cracklings

Dumplings with onions and cracklings are a simple and very satisfying dish, especially delicious hot. Serve with or without sour cream.

Ingredients
- Flour 250 g
- Butter 40 g
- Egg 1 piece
- Water 40 ml
- Salt to taste
- Lard 100 g
- Onion 1 piece
- Sour cream to taste
- Greens to taste
Cooking method
Add softened butter, an egg, boiled water at room temperature and salt to the sifted flour.
Substitute firm and elastic dough. Wrap it in plastic and leave at room temperature for 15 minutes.

Roll the dough into sausages and cut into small pieces. Or pinch off a piece, make a ball, and then roll it out slightly so that it becomes oblong.
Sprinkle flour on the table before working with the dough.
Boil the salted water in a saucepan. Add the dumplings and cook for about 5-7 minutes after boiling again.

While the dumplings are cooking, cut the bacon and onion into small pieces.
Try to choose lard with a meat layer.
Fry lard in a skillet over medium heat to melt the fat out of it. Add the onion and cook for another 5 minutes, until the vegetable is golden brown.
Throw the finished dumplings in a colander, and then put them in a pan with onions and cracklings.
Fry for another 5 minutes. If the bacon was unsalted, lightly salt the dish.
Can be served with sour cream or chopped herbs.
