Cake "Red Velvet" at home: a classic recipe

Sift flour and mix with starch, soda, cocoa and salt. Separate the yolks from the whites.
Beat butter with sugar with a mixer. Add egg yolks, vegetable oil, vanilla extract and vinegar. Beat 2-3 minutes.
Continuing to beat the mixture at medium speed, add the flour mixture and buttermilk alternately in portions.
You can make your own buttermilk. To do this, mix 240 ml of milk with a tablespoon of lemon juice and leave the mixture for 5 minutes.
Add food coloring to the dough, mix thoroughly. Beat the whites with a mixer until thick, stable foam, it will take 3-4 minutes.
Carefully fold the beaten egg whites into the batter. Distribute it evenly between the forms. Bake the cakes for 30-35 minutes.
Readiness can be checked with a toothpick. Stick it in the center of the cake. If it stays dry, it's time to take it out of the oven.
Without turning off the mixer, gradually add powdered sugar, salt and vanilla extract into the cream. Beat 2-3 minutes.
With a sharp knife, cut off the crusts from the top of the cakes and trim them. Lubricate one cake with cream, put the second on top. Cover the top and sides of the cake with cream.
