Fried eggs with tomatoes, sausage and bacon: recipe

2 tbsp. spoons + for baking
Cut the potatoes into not too large pieces. Salt, pepper, drizzle with oil and place on a baking sheet. Bake for about 20-25 minutes at 200°C.
Cooking time may vary slightly depending on the size of the pieces.
Cut the onion into quarters of rings or smaller, sausage and bacon into small pieces. Pass the garlic through a press or chop finely.
Dip the tomatoes in boiling water for half a minute, rinse with cold water and carefully remove the skin. Grind the pulp in a blender.
Put sausage with bacon in the same pan. Leave on fire for a few minutes. Sprinkle with paprika, pour over with vinegar and stir.
Add tomatoes, salt and pepper. Reduce heat to low and cook for about 5-10 minutes more until thickened, stirring occasionally.
Make four small indentations. Crack an egg into each, season with a little salt and pepper, cover with a lid. Leave on fire until the eggs are ready.
At this step, the scrambled eggs can be rearranged in the oven and brought to readiness in it.
