Pancake rolls with ham and tomatoes

These bright pancake rolls with ham and spicy ricotta and horseradish cream will definitely become the main snack on your festive table.

Ingredients
- Flour 400 g
- Salt to taste
- Eggs 2 pieces
- Milk 800 ml
- Vegetable oil 2 tbsp. spoons + for frying
- Ricotta 400 g
- Cream, 33% fat, 4 tbsp. spoons
- Creamy horseradish 1 tbsp a spoon
- Salt to taste
- Ground white pepper to taste
- Ham 80 g
- Rucola 50 g
- Cherry tomatoes 300 g
Cooking method
Sift flour and mix with salt. Beat the eggs with a whisk until smooth and add to the flour.
Pour milk and butter into the flour and beat the dough with a mixer until smooth.
Grease a skillet with oil and fry the thin pancakes, then cool and cut into strips 3-4 cm wide.
Combine ricotta with cream and horseradish, add salt and pepper to taste, beat with a blender until smooth.
Cut the ham into thin slices 3-4 cm wide.
Brush each strip of pancake with ricotta, top with a slice of ham and a little rucola.
Place the cherry tomato on the edge of the strip and roll the pancake into a tight roll.
Cut the roll in half and hold the pieces together with toothpicks. Roll the rest of the pancakes in the same way.
