Juicy pork tenderloin baked in the oven

Pork tenderloin is first marinated in lemon juice with garlic, mustard and herbs, and then baked in the oven. Therefore, the meat is tasty and juicy.

Ingredients
- Pork tenderloin 450 g
- Lemons 2-4 pieces
- Garlic 4 cloves
- Dijon mustard 1 tbsp spoon
- Olive oil 3 tbsp spoons
- Dried rosemary 1 tsp spoon
- Dried thyme 1 tsp spoon
- Salt ½ tsp spoons
- Ground black pepper ½ tsp spoons
Cooking method
Rinse the meat and pat dry with paper towels.
Rinse the lemons well and use a grater to remove 1 tablespoon of zest. Squeeze 120 ml of juice from the pulp of the fruit. Pass the garlic through a press.
In a bag, combine the zest, juice, mustard, garlic, 2 tablespoons of oil, rosemary, thyme, salt and pepper.
Put the pork there, tie the bag and shake several times to evenly distribute the marinade.
Put the meat in the refrigerator for 3-4 hours, and then remove and leave for an hour at room temperature.
Preheat the oven to 230 ° C and put a cast-iron pan in it for 10 minutes.
Take out the pan, pour oil into it and tilt it in different directions to distribute it over the entire bottom.

Put the pork in there and put it in the oven immediately. Bake for 10 minutes.
Be careful, as the marinade splashes into the pan.
Turn the meat over gently to the other side. Reduce the temperature to 200 ° C and cook the meat for about 15 minutes more.
Remove the tenderloin from the oven, cover with foil and let stand for 10-15 minutes before serving.
