A thick sweet and sour sauce of ripe plums, tomatoes and a whole bunch of spices goes well with meat, poultry and side dishes.
Cut the plums in half, remove the seeds. Chop the tomatoes coarsely, and finely chop the onion and garlic. Grate fresh ginger on a fine grater.
Place in a heavy-bottomed saucepan, pour in water. Bring the mixture to a boil and cook over low heat, covered, for 30 minutes.
Remove from heat, cool slightly and grind with a blender until smooth.
Add sugar, vinegar, spices and salt and stir. Simmer the sauce over low heat for 30-40 minutes until thickened.
Hot sauce can be poured into sterilized jars and rolled up for the winter, or cooled and stored in the refrigerator for no longer than a week.
