Spring rolls with crab sticks, lettuce and crunchy juicy cucumbers are a great alternative to the usual salads.
Cut the cucumber and carrots into small strips or thin flat slices.
Pour warm water into a large bowl and dip a sheet of rice paper into it for a few seconds. Then lay out on a work surface slightly moistened with water.
Place the cucumber and carrot salad in the center of the rice leaf. Fold the rice paper over to cover the filling.
Top with a crab stick, some herbs and sesame seeds. Fold the edges towards the center and wrap the roll. Do the rest of the spring rolls in the same way.
Serve the finished snack immediately.
