Oven baked Anglesey eggs

Bake boiled eggs in the oven with mashed potatoes, leeks and deliciously tender béchamel cheese sauce. You'll like it.

Ingredients
- Potato 500 g
- Cream 125 ml
- Butter 100 g
- Leek 2 pieces
- Water 100 ml
- Flour 50 g
- Milk 500 ml
- Cheese 100 g
- Salt to taste
- Ground black pepper to taste
- Boiled eggs 3-5 pieces
- Vegetable oil 1 tsp the spoon
Cooking method
Boil the potatoes for about 20 minutes. Drain off all the water, add cream and half the butter. Mash in mashed potatoes.
Cut the light part of the leek into small pieces. Place in a skillet, pour in some water and simmer until soft for about 10 minutes.
Melt the butter in a skillet over low heat. Add flour and stir to avoid lumps. Pour in milk gradually and stir.
Add grated cheese to the sauce and stir again, lightly salt.
Combine the leek with potatoes, salt and pepper. Cut the eggs into quarters or halves.
Place the potatoes in a greased dish. Place eggs on top and press lightly. Pour the sauce over.
Bake for about 15 minutes at 180 ° C.
