An omelet with green beans will be even tastier and more satisfying than a regular one. A great option for an original breakfast or light dinner.
If using fresh beans, cut off the ends and cut into several pieces.
Add fresh or frozen beans to boiling salted water. Cook the first for about 3 minutes, and the second for about 5.
Throw in a colander, pour cold water over and leave for a few minutes to drain the liquid.
Toss the beans with beaten eggs, salt and pepper.
Preheat a skillet over medium heat and brush with oil.
Place the egg mass there. Sprinkle with spices and chopped herbs if desired.
Cover and cook for about 10 minutes, until the omelet sets.
