If you want something light, refreshing and different, try this zucchini salad. Pickled vegetables are combined with cheese and spicy dressing.
Grate the lemon zest with a fine grater. Pour in lemon juice and stir. Then mix the citrus mass with the olive oil.
Rinse the zucchini and cut into thin rings or half rings. Season them with the prepared mixture, salt and pepper and leave to marinate for 15-30 minutes.
Rinse the arugula and other herbs and pat dry with a paper towel. Finely chop the greens and combine with arugula.
Add the marinated zucchini along with the dressing they were in and the sliced feta. Stir the salad thoroughly.
