A wonderful combination of crispy baguette, salted feta cheese and soft bell pepper. Serve bruschetta with cheese immediately after cooking.
Bake the peppers until they are black and tan in an oven preheated to 200 degrees. This will take about half an hour.
Place hot peppers in a plastic bag, container with a tight-fitting lid, or wrap it well in foil. Leave alone for 15 minutes.
Meanwhile, drizzle the baguette slices with olive oil and dry in the oven until crisp.
From cooled peppers, remove the skin and seeds, cut the pulp into thin strips.
Mash cheese and mix with chopped garlic and ground pepper.
Spread the cheese mass on top of the bread, top with baked pepper strips and garnish with basil.
Drizzle with extra olive oil if desired.
