Turnip puree with baked garlic will suit both a simple dinner and a festive table. It has a delicate taste and delicate nutty aroma.
Preheat oven to 200 ° C. Cut off the top of the garlic, drizzle with olive oil, sprinkle with salt and pepper, and wrap in foil.
Bake the garlic in a preheated oven until soft for 40 minutes, then cool and peel.
Peel the turnips, cut into large cubes and boil in boiling salted water until soft for 35–40 minutes.
Melt the butter over low heat and heat for 8-10 minutes until brown. Stir the oil periodically and remove any hard lumps from it.
Throw the finished turnip in a colander, transfer back to the pan, add garlic, thyme, ghee, salt and pepper to taste and mash everything into a homogeneous puree.
