With the arrival of spring and the heat came and appetite for various sandwiches with vegetables. So I decided to look delicious and fairly simple recipes. Especially because after the May holidays, it's time to take a short break in eating meat;)

Thus, we begin with the simplest and most delicious - Caprese! And even if I had already fasted this recipe, I will repeat again.
Recipe №1. Sandwich with mozzarella and tomatoes
Ingredients: tomatoes, bread, mozzarella, garlic, fresh or dry basil, olive oil, wine vinegar and black pepper.
Preparation. You can cook it as fresh bread and a lightly toasted. In the second case, you will need to sprinkle one side of a piece with a mixture of olive oil with crushed garlic and put that party on the hot grill or pan. Then you need to flip the bread toasted side up, top it with sliced tomatoes rings, then a layer of mozzarella and wait until the cheese starts to melt a little. Put sandwiches on a plate, a little salt and pepper to taste, sprinkle with olive oil and wine vinegar. The final touch - the addition of fresh basil on top.
You can do all the same thing, but without toasting bread. That is, you're just watering on one side with a mixture of butter and garlic, put on top of the tomatoes and cheese, add salt, pepper, a little vinegar on top and fresh greens.
Recipe №2. Grilled sandwiches with roasted peppers and goat cheese
Ingredients: baked peppers, goat cheese, olive tapinad, bread, arugula (optional).
Preparation. Bake peppers, peel it from the seeds and peel. Lightly fry the bread on the grill pan without oil or in a toaster. One piece of spreadable goat cheese, the second - tapinadom. Between them, put the chopped roasted peppers and arugula.
About cheese - if you do not like goat, you can take any soft cheese. Buy ready-made olive tapinad will be expensive, so you can just grind in a blender, pitted olives with olive butter and garlic (100 g olives 1 small garlic clove) - get the base mixture, which is at least much more tasty and cheap!
Recipe №3. Sandwich with radish, tomatoes, feta and tzatziki
Ingredients: bread, radishes, tomatoes, feta, lettuce, tzatziki or his replacement - a mixture of sour cream with finely chopped garlic, cucumber and herbs.
Preparation. Sliced radishes and tomatoes into thin rings, wash and thoroughly dry the lettuce leaves, mix with feta and tzatziki sauce. Spreadable bread slices, each with one hand, with a mixture of feta and sauce, in one slice of bread put the sheet lettuce, radish and tomato slices a little salt and pepper, cover the top of the second piece of bread by pasting down.
