7 ginger recipes for a perfect winter mood

In cold weather, especially I want to eat something warm and spicy. In this selection - soups, main courses and desserts with ginger, which can be cooked in an ordinary winter day, and on holidays. Plus, a simple recipe for ginger tea, that will not leave a bad weather a chance.
soups
Ginger and carrot soup
Ingredients
- 2 tablespoons sweet butter;
- 2 onions;
- 6 cups chicken broth;
- 900 g of purified and chopped carrot;
- 2 tablespoons grated ginger;
- 1 cup cream;
- salt, white pepper and sour cream - to taste.
preparation
Put oil in a pan and melt it over medium heat. Add the peeled and finely chopped onions. Cook it, stirring frequently, until tender. Then add the broth, carrots and ginger. Cover the pan with a lid and bring to a boil, reduce heat and simmer soup until tender carrots.
Remove the dish from the heat and let it cool down for five minutes, to shift part in a blender and grind until smooth. Do the same operation with all meals.
When working with hot soup, follow these guidelines:
- fill no more than half blender;
- leave the lid slightly open on one side to avoid the heat of the explosion;
- blender cover with a towel before you start mixing.
Put the soup back into the pan, put it on a high heat and add the cream. Stir the soup, bring it to a boil, season with salt and pepper and remove from heat. Serve with sour cream.
Spicy udon with beef
Ingredients
- 700 g of beef;
- 8 cups broth;
- 4 cups of water;
- ½ cup soy sauce;
- 110 g of purified, finely chopped ginger;
- 1 onion;
- 3 garlic cloves;
- ½ stars of anise;
- 220 g shiitake mushrooms;
- 3 green onions pen;
- 450 g of udon noodles.
preparation
Mix the meat in the pan, broth, water, soy sauce, ginger, anise, chopped onion and chopped garlic. Put the pan on low heat, cover and simmer until meat is tender (may take several hours). Then remove the meat, let it cool slightly and divide into large pieces.
Strain broth and return it back to the fire. Add the meat, sliced mushrooms and green onions. Boil for 15 minutes to soften the fungi.
Parallel boil noodles in salted water to a state of al dente. Then drain the water and add the noodles in soup.
Main dishes
Pork fillet with ginger sauce
Ingredients
- 600 g pork tenderloin;
- 2 teaspoons vegetable oil;
- salt and freshly ground pepper - to taste.
For the sauce:
- ½ cup apple juice;
- ½ cup chicken broth;
- 1 tablespoon soy sauce;
- 3 tablespoons white raisins;
- ½ teaspoon ground ginger;
- ¼ teaspoon cornstarch;
- 1 teaspoon of water.

First, prepare the pork tenderloin. To do this you will need a pan that can be used for cooking on the stove and in the oven.
Heat the oil in a frying pan, put pork, season it with salt and pepper and cook at high heat until it is covered with golden brown (about three minutes on each side).
Then move the pan in the oven, preheated to 180-200 degrees, and cook the pork for 18-20 minutes. During cooking, turn the piece twice. If you have a kitchen thermometer, the signal of readiness to cut rate of 60 degrees in the thickest part of the piece.

- 1 lime;
- ½ cup chicken broth;
- 1 tablespoon Asian fish sauce.

Ingredients
Cookie:
- 1½ cups flour;
- 1½ tsp baking soda;
- 2 teaspoons ground ginger;
- 1 teaspoon ground cinnamon;
- ¼ teaspoon salt;
- 200 g of softened butter;
- ¾ cup sugar;
- 1 large egg;
- ¼ cup molasses.
For filling:
- 6 tablespoons softened butter;
- 2 cups sugar;
- 1½ tablespoon of lemon juice.
preparation
Combine flour, baking soda, ginger, cinnamon and salt. In a separate bowl whisk mixer on medium speed butter and sugar. Add the egg, molasses and dry ingredients. Beat mixture on low speed.
Preheat oven to 180 degrees. With tablespoon Spread batter in pan, covered with parchment. That cookies do not stick, leave gaps between the workpieces 9-10 centimeters. Bake for 20 minutes, and then remove the cookies from the oven and cool. In the same way, prepare all the dough.

- 160 ml of vegetable oil;
- 2 eggs;
- 250 g of grated carrot;
- 75 g raisins;
- 100 g of grated ginger.
preparation
Whisk the sugar, flour, baking soda, vegetable oil and eggs in large bowl. Add the carrots, raisins and ginger and mix well. It should look quite a batter.
Put the dough into a cake pan and bake in a preheated 150 degree oven for about an hour.
The drinks
Ginger tea with mint and spices
Ingredients
- 3 cm and purified grated ginger;
- 1.5 cm cinnamon sticks;
- 4 cardamom pods;
- 5 pieces of cloves;
- ¼ cup chopped fresh mint;
- honey or sugar - to taste.
preparation
In a saucepan or large kettle, combine the ginger, mint and spices and pour four cups of boiling water. Let the tea brew for five minutes, strain and pour into cups. Add the drink sugar or honey.
This spiced tea will save you in the cold weather, and will be a good addition to the desserts.
