How to choose a churchkhela for storage
Most often, this delicacy is sold without packaging and in limbo. Therefore, try to buy churchkhela indoors or in markets with a large flow of buyers - this way you will be more likely to get a fresh and clean product. You should not take sweets on the street and near roads - most likely, a layer of dust has already settled on them.
Traditional churchkhela is made from berry juice, nuts and flour. Failure to comply with the proportions of the recipe has a bad effect on the storage of sweets. A quality product should be smooth, without sugar coating. If there are cracks on the delicacy, it means that the manufacturer went too far with flour.
Fresh churchkhela is covered with a hard crust, but remains soft inside. If the "sausage" bends easily, while maintaining elasticity, its taste will be dubious and resemble rubber in consistency.
When buying, carefully inspect the churchkhela for the presence mold. If there are even barely noticeable spots on the surface, you should not take such a product.
How to store churchkhela
Do not keep sweets at home in limbo, otherwise they will quickly dry out and deteriorate. It is better to wrap each "sausage" in paper or a piece of fabric made from natural fibers so that the material covers it completely. It is better to do this immediately after purchase. If you are returning from vacation, you need to transport churchkhela in this form.
Treats should not be packaged in plastic bags or cling filmotherwise, without air access, condensation will accumulate on its surface, and then mold will form.
To store churchkhela, find a dry, dark and cool place with a temperature not exceeding 22 degrees. If your home has a basement or cellar with low humidity, send sweets there. Wrapped "sausages" can also be put in a closed kitchen cabinet, located away from heating appliances.
When there are no suitable conditions in the home, a refrigerator will come to the rescue. Store the churchkhela packages on the middle shelf or in the compartments on the door. There should not be strong-smelling foods in the neighborhood. And here freezing treats are a bad idea. Under such conditions, it will lose its taste.
As a rule, churchkhela does not lie longer than 1-2 months. Over time, it becomes hard and tough, so it is simply difficult to eat it in this form.
If you have a vacuum cleaner, you can use it to pack the churchkhela in special bags and store it in the same way as in a paper or fabric shell. It is difficult to say how much sweetness will remain fresh in this form. Manufacturers who package churchkhela in this way indicate a shelf life of up to two years.
