Cheesecake with cherries in the oven: recipe

Crush the cookies into crumbs and mix with melted butter, sugar and salt. Spread the crumbs in an even layer along the bottom of the mold, tamp and form a side. Bake the base for 8-10 minutes.
Reduce oven temperature to 160°C. Combine room temperature cream cheese, eggs, sugar, sour cream, vanilla extract and salt. Beat with a mixer at high speed until smooth.
Stir on low speed for another 1-2 minutes. Pour the mass onto the base, tap the mold on the table to remove air bubbles.
Fill a deep baking sheet with boiling water, place the mold there. Place the cheesecake pan in the oven and bake for 75 minutes.
Turn off the oven, open the door ajar and leave the cheesecake inside for 1 hour. Then take it out, cool to room temperature, cover with cling film and refrigerate for at least 4 hours.
Combine cherries with sugar and lemon juice, leave for 15 minutes. Mix starch thoroughly with water.
Combine cherries with starch liquid. While stirring, bring the berries to a boil and boil for 2-3 minutes until thickened. Cool down.
