Combine all dry ingredients in a large bowl. Whisk the whites lightly in a separate bowl.
Don't beat the egg whites too much. Otherwise, the dough will start to rise when baking, and you need flat pancakes.
Stir well with a rubber spatula and add half of the protein. Stir well to avoid lumps. The mixture should be firm and smooth.
You can divide the dough into several parts and add food coloring to each - you get a multi-colored fortune cookie
Pour the remaining protein into a bowl and beat until smooth. The dough should look like a thick biscuit.
If suddenly the dough comes out too thick (depending on the flour and the size of the eggs), add a little more water or egg white.
Put the prepared mass on a baking sheet: about ½ tablespoon each at large intervals (about 7 cm). Use a spoon and a rubber spatula to make the cookies flat and round, no more than 2 mm thick.
Do not put a lot of cookies on a baking sheet at once, even if they fit there. You just won't have time to fold them before they cool down.
Place in oven for 8-10 minutes or until tender. Make sure that the edges are not too dry, otherwise the biscuits will break when folding.
Remove from oven, flip quickly, insert fortune note, fold in half, shape into an envelope and place in cupcake tins or something to secure it like that.
If you want your cookies to remain crispy, store them in a bag.
