Ossetian pies with pumpkin

Try making famous Ossetian pies from soft yeast dough with juicy and aromatic pumpkin flavored with thyme.

Ingredients
- Fresh yeast 20 g
- Water 500 ml
- Sugar 1 tbsp. spoon
- Flour 800 g
- Salt 2 tsp spoons
- Vegetable oil 3 tbsp. spoons
- Pumpkin 1 200 g (unpeeled weight)
- Onions 2 pieces
- Vegetable oil 3 tbsp. spoons
- Salt 1 tsp spoon
- Sugar 1-2 tbsp. spoons
- Dried thyme 1 tsp spoon
- Butter 50 g
Cooking method
Crumble the yeast and dissolve in warm water, add sugar, stir. Leave the mixture in a warm place for 10-15 minutes.
Combine flour with salt, add water with yeast and oil. Knead a soft and slightly sticky dough.
Put it in a large bowl, cover with cling film and leave in a warm place for 1-2 hours.
Peel and grate the pumpkin on a medium grater. Cut the onion into small cubes.
Fry the onion in heated vegetable oil for 5-6 minutes over low heat until golden brown.
Add the onion, salt, sugar and thyme to the pumpkin and stir.
When the dough has doubled, crinkle and divide into 3 equal portions.
Roll each piece into a ball. Cover the blanks with a towel and leave in a warm place for 15 minutes.
Preheat oven to 220 ° C. Line a baking sheet with parchment paper.
Roll each piece of dough into a round cake 5–7 mm thick, place the filling in the middle. Gather the edges of the dough on top and pinch tightly.
Turn the workpieces over, seam down and gently stretch with your hands to make round workpieces 10-15 mm thick. Make a small hole in the center of each.
Place the pieces one at a time on a baking sheet and bake for 15-20 minutes until golden brown. Grease the finished pies with butter.
