Galette with pumpkin, feta and thyme

Galeta with pumpkin will be appreciated by true gourmets. An ideal combination of crumbly dough, soft and tender pumpkin, cheese, aromatic herbs and honey.

Ingredients
- Butter 170 g
- Flour 200 g
- Sugar 3 tbsp. spoons
- Salt 1 pinch
- Water 4 tbsp. spoons
- Pumpkin 700 g
- Vegetable oil 2 tbsp. spoons
- Salt to taste
- Ground black pepper to taste
- Dried thyme to taste
- Feta 50-70 g
- Honey to taste
Cooking method
Cut the cold butter into small pieces. Pound together with flour, sugar and salt until fine crumbs are obtained.
Add cold water and knead the dough. Roll it into a ball, wrap it in a plastic wrap or bag and leave it in the freezer for 20-25 minutes.
Cut the pumpkin into small pieces. Fold into a mold, drizzle with oil, sprinkle with salt, pepper and thyme and stir.
Bake the pumpkin at 200 ° C for about 15-20 minutes, stir occasionally.
Place the dough on the parchment paper and roll out into a thin, round layer. Transfer the blank together with the paper to a baking sheet.
Put the pumpkin with feta on the blank, stepping back a few centimeters from the edges.
Raise the free edges of the dough with parchment and fold towards the center of the cake. Pinch gently with your fingers.
Bake the biscuit at 180 ° C for 35–40 minutes. Cool slightly before serving and pour over with honey.
