These soft Swedish cinnamon buns with cardamom flavor and sugar topping are the perfect pairing for a cup of your favorite coffee.
Mix milk and butter. Heat the mixture over low heat to about 35–40 ° C.
Combine flour, sugar, yeast, cardamom, and salt in a large bowl.
Combine warm milk mixture with flour, knead soft smooth dough.
Roll the dough into a ball, cover with cling film and put in a warm place for 1 hour to rise.
For the filling, combine softened butter with sugar, cinnamon, cardamom and vanilla extract.
Wrap the dough and roll it into a rectangular layer about 50 by 40 cm in size.
Brush the filling over the dough. Turn the layer with the narrow side towards you and mentally divide it into 3 equal parts.
Fold the top third of the layer so that the side with no filling remains on top, cover it with the bottom third of the dough.
Roll out the dough to form a 40 x 20 cm rectangular slab. Cut the dough into long strips 2 cm thick.
Gently stretch each strip with your hands so that its length approximately doubles, and twist.
Wrap a strip of dough twice around two fingers like a bandage. Lay the free edge of the strip on top of the bun and hide under its bottom.
Line a baking sheet with parchment paper and place the buns on top of it, cover them with a towel and leave for 45-60 minutes.
Preheat oven to 190 ° C. Beat the egg with 1 tablespoon of water with a fork.
Grease the buns with an egg, sprinkle with pearl sugar if desired and bake in a preheated oven for 15-18 minutes until golden brown.
