Pasta with tender shrimps, zucchini and a fragrant sauce with white wine and capers is ideal for a quick yet delicious dinner.
Peel the shrimp. Cut the courgettes into small pieces or strips. Chop the garlic finely.
Heat the olive oil in a skillet, fry the garlic and chili for 1 minute. Add shrimp and capers and cook for 3-4 minutes.
Pour in the wine and cook for 2-3 minutes until the alcohol evaporates. Add zucchini and water and season with salt and pepper to taste.
Simmer covered over low heat for 8-10 minutes until the courgettes are soft. Boil the pasta in boiling salted water.
Place the pasta in a colander, mix with the sauce and cook for 1 minute. Sprinkle the pasta with chopped parsley.
