Potato quiche is a great breakfast option. Certainly not as fast as classic scrambled eggs or sandwiches, but more interesting and nutritious.

- Potatoes 4 pieces
- Butter 35 g
- Cream 240 ml
- Eggs 3 pieces
- Milk 120 ml
- Salt to taste
- Vegetables to taste
- Cheese to taste
- Fish to taste
- Meat products to taste

Start by preparing the potato base. It differs from classic potato pancakes only by the presence of butter. Peel the tubers and grate them on a fine grater.
Squeeze the grated potatoes thoroughly, try to dry the mass well with a napkin or towel, and then mix with butter.

Oil a 20 cm round pan and spread over the potato mass. Make sure that the layer is as uniform as possible both on the bottom and on the walls.
After the potato crust is formed, send it to bake in the oven at 230 ° C for half an hour.

In the meantime, beat the base of the filling with a mixture of cream, eggs and milk, and season with salt. As for the rest of the fillers, you can take vegetables or other foods of your choice.
Cheese, fish and meat products are also suitable as fillings.

Spread the filling of your choice over the potato base and pour over the milk and egg mixture.

Return the dish to the oven, having previously cooled it to 180 ° C, and bake for half an hour.
Allow the quiche to cool for 10 minutes before removing from the mold and slicing.
