Vegetable stew with minced meat

There are many ingredients in this dish: zucchini, eggplant, carrots, tomatoes, onions and peppers. Therefore, the vegetable stew with minced meat turns out to be aromatic and appetizing.

Ingredients
- Carrots 1 piece
- Onion 1 piece
- Vegetable oil 1-2 tbsp. spoons
- Minced meat 300 g
- Potatoes 2 pieces
- Eggplant 1 piece
- Water 150 ml
- Zucchini 1-2 pieces
- Tomatoes 1-2 pieces
- Sweet pepper 1 piece
- Salt to taste
- Ground black pepper to taste
- Garlic 3 cloves
Cooking method
Cut carrots and onions into medium pieces. Fry in a skillet with butter for 5-7 minutes.
Put the minced meat in the same pan and cook, stirring occasionally, for 7-8 minutes.
Cut the potatoes and eggplants not too finely and add to the pan to the minced meat. Add water, cover and simmer for 5-7 minutes.
Cut the courgettes into the same slices as potatoes and eggplants. Place in skillet, stir and simmer for another 5 minutes.
Cut the tomatoes and peppers into medium slices. Place with meat and vegetables, stir. Season with salt, pepper, add chopped garlic.
Let the stew simmer over low heat, covered, for 15 minutes or longer, until the vegetables are tender enough. Stir occasionally.
