Prepare your usual cheesecakes with juicy apricots. Bright pieces of fruit will make the dish not only tastier, but also much more beautiful.

Ingredients
- Cottage cheese 500 g
- Egg 1 piece
- Sugar 3-4 tbsp. spoons
- Salt 1 pinch
- Flour 100 g + for breading
- Apricots 4-6 pieces
- Vegetable oil 4-5 tbsp. spoons + for sculpting
Cooking method
Preheat oven to 200 ° C. Line a baking sheet with parchment paper.

Rub the cottage cheese through a fine sieve or chop with a blender until smooth.
To make the curd cakes better keep their shape, wrap the curd in a clean cloth towel before cooking and hang it for 2-3 hours so that the excess whey is glass.
Whisk the egg with sugar and salt. Combine cottage cheese with egg, add flour and mix everything well.
Peel the apricots and cut into large slices.
Grease your hands with vegetable oil, form a thin cake from 2-3 tablespoons of dough.
Place 2-3 apricot slices in the center of the flatbread, cover the edges of the flatbread and form a smooth curd.
In the same way, mold the rest of the cheese pancakes, roll them in flour and remove its excess.
Heat vegetable oil in a skillet. Fry the cheese cakes for 2-3 minutes on each side until golden brown.
Place the pancakes on a baking sheet and bake in a preheated oven for 10-12 minutes.
