Eggplant caviar passed through a meat grinder

Caviar from eggplant and other vegetables passed through a meat grinder turns out to be fragrant and tasty. Make some jars of snacks for the winter.

Ingredients
- Eggplant 2 kg
- Tomatoes 600 g
- Carrots 300 g
- Onions 300 g
- Bulgarian pepper 300 g
- Vegetable oil 100 ml
- Salt 40 g
- Sugar 120 g
- Ground black pepper ¹⁄₂ tsp spoons
- Garlic 1 head
- Vinegar 9% 50 ml

Cut vegetables into medium pieces. Separately, grind the tomatoes, carrots with onions and peppers, and eggplants through a meat grinder.
The weight of vegetables is indicated already peeled. For eggplants, you only need to cut off the tips, you do not need to remove the skin.
Heat the oil in a heavy-bottomed saucepan. Spread out the mixture of carrots, onions and peppers. Stir, fry until the vegetables start juicing.
Drain the resulting juice from the eggplant. Place the eggplants in a saucepan, stir and cook for about 20 minutes.
Add the tomato puree, stir and simmer for 30 minutes. Stir occasionally.
Pour in salt, sugar, pepper and garlic minced through a press. Stir well and cook for another 10 minutes.

Add vinegar and after 5 minutes remove the caviar from the stove. Lay it out in sterilized jars, roll it up and wrap it up. After cooling, store in a cool place.
