Zucchini muffins with bacon and onions

The baked goods are very tasty and aromatic. Use zucchini muffins as a snack or serve as a snack, best with sauces.

Ingredients
- Onion 1 piece
- Vegetable oil 3 tbsp. spoons
- Zucchini 1 piece
- Salt 1 tsp a spoon
- Eggs 2 pieces
- Sugar 1 tsp a spoon
- Flour 500 g + for sprinkling
- Baking powder 1½ tsp spoons
- Smoked bacon 70 g
Cooking method
Chop the onion into small pieces. Then, stirring occasionally, fry it with 2 tablespoons of vegetable oil over medium heat.
Grate the zucchini on a fine grater. Season with salt, stir and leave for 3-5 minutes. Then squeeze out the resulting juice.
Whisk the eggs and sugar lightly in a bowl. Pour the flour and baking powder into this mixture and stir.
Cut the bacon into small pieces and add them to the dough.
Put the grated zucchini with fried onions (along with butter) in a bowl of dough and stir.
Lubricate the muffin tins with a little oil and dust the sides with a little flour.
Fill the molds with dough. Place in an oven preheated to 200-220 ° C.
Bake for about 12-15 minutes, until muffins are golden brown.
