Sugar-free apple and raisin pancakes

These apple and raisin pancakes are made with sugar-free whole wheat flour. Roasted fruits with cinnamon give them an amazing aroma.

Ingredients
- Raisins 40 g
- Apples 2 pieces
- Coconut oil 2 tsp spoons
- Ground cinnamon 1 tsp a spoon
- Whole grain flour 60 g
- Plain wheat flour 60 g
- Baking powder 2 tsp spoons
- Milk 180 ml
- Egg 1 piece
Cooking method
Soak the raisins in hot water while you prepare the rest of the ingredients.
Cut the apples into small cubes. If desired, you can first remove the skin from them.

Heat a skillet over medium heat and melt half the butter. Add apples, stir in cinnamon, reduce heat and cook for about 3 minutes. Remove from stove.
Coconut oil can be substituted for butter.

Combine both flours with baking powder. Whisk the milk and egg separately. Pour liquid ingredients to dry ingredients and stir.
For these pancakes, you can use only whole grain flour, not using regular wheat flour.
Drain the liquid from the raisins. Add them to the dough along with the apples and stir.
Melt the remaining butter in a skillet over medium heat. Fry the pancakes on both sides until lightly browned.
