This lentil salad turns out to be light, but at the same time satisfying, and the spicy lemon-mustard dressing gives it a pleasant fresh taste.
Rinse the lentils, boil until soft and cool.
How to cook different colored lentils
Cut the cucumber, tomatoes, bell peppers and celery into small cubes.
Chop the cilantro finely. Cut the shallots into thin rings.
Combine cooled lentils with vegetables and herbs.
Peel and chop the garlic. Squeeze 2 tablespoons of lemon juice. Whisk all the ingredients for the dressing, pour over the salad and mix everything.
