Zucchini rolls with shrimps

Zucchini rolls with fried shrimp, curd cheese and subtle citrus aroma are a great option for a quick and easy snack.

Ingredients
- Lemon 1 piece
- Vegetable oil 2-3 tbsp. spoons
- Large shrimps 4-5 pieces
- Zucchini 1 piece
- Salt to taste
- Ground black pepper to taste
- Spices to taste
- Curd cheese 4 tbsp. spoons
Cooking method
Remove the zest from the lemon with a grater - 1 teaspoon is enough. Squeeze 1 tablespoon of juice from the pulp.
In a skillet, heat 1 spoonful of oil over medium heat. Add the zest and after 30 seconds add the seafood. Fry for a few minutes on each side until tender.
Place the shrimp on a plate and drizzle with lemon juice.

Cut the zucchini lengthwise into thin strips. Season with salt, pepper and spices on both sides. Fry in a pan or grill for a minute or two on each side.
The thinner the courgettes are cut, the faster they will be cooked.

Brush the slightly cooled strips of vegetable with cheese, place a shrimp on each and wrap in rolls.
To prevent the rolls from spinning, they can be fastened with toothpicks.
