A salad with fried zucchini and honey-citrus dressing turns out to be light and aromatic, and it is prepared in a matter of minutes.
Cut the courgettes into thin slices. Season with salt and pepper.
Grease a frying pan with oil and heat over medium heat. Arrange some of the courgettes in one layer and brown on both sides.
Transfer the finished vegetables to paper towels. Fry the remaining courgettes in the same way.
Dry the pine nuts in a clean skillet over medium heat for 3 minutes.
Grind about half of the nuts with a pestle and mix with butter, lemon juice, honey and salt.
Transfer the zucchini to a salad bowl, pour over the sauce, sprinkle with whole nuts and chopped herbs.
