Zucchini rolls with crab sticks, carrots and cheese are very tasty and aromatic. A great cold snack for summer days.
Boil the carrots until soft. Cool and grate on a coarse grater with cheese and crab sticks.

Season with salt and pepper, season with mayonnaise and stir.
Cut the courgettes lengthwise into thin slices. Season lightly with salt and pepper each on both sides.
Heat oil in a skillet over medium heat. Fry the zucchini for a few minutes on each side to soften but not brown. Pat dry with paper towels and cool.
Place the filling on each zucchini and wrap in rolls. Refrigerate for 1-2 hours.
