Grated currant pie

Grated currant pie turns out deliciously tasty, especially after cooling down. Loose dough in it is ideally combined with juicy berries.

Ingredients
- Flour 320 g
- Potato starch 160 g
- Sugar 200 g
- Salt 1 pinch
- Margarine 200 g
- Egg 1 piece
- Soda 1½ tsp spoons
- Vinegar 9% or apple cider 1 tsp the spoon
- Vegetable oil 1 tbsp. the spoon
- Currant 220-250 g
- Sugar 1 tbsp. the spoon
- Powdered sugar to taste
Cooking method
Toss flour with starch, sugar and salt.

Melt margarine in a water bath, cool slightly and mix with an egg and soda quenched with vinegar.
You can use butter instead of margarine.
Pour the margarine into the flour mixture and knead until the dough is soft and oily.
Divide the dough into two equal parts, put in bags. Leave in the freezer for an hour and a half.

Line a baking dish with parchment and brush with oil.
If not using parchment, brush with oil and sprinkle with semolina.
Remove half of the dough from the freezer and grate on a coarse grater directly onto the baking sheet. Spread evenly.

Put currants on top and sprinkle with sugar. Grate the other half of the dough over the berries and distribute evenly.
Use frozen berries directly from the freezer.
Bake the cake for about 45-50 minutes at 180 ° C.
Cool before serving and sprinkle with powdered sugar if desired.
