It will take a matter of minutes to cook an omelet in the microwave. Top it off with vegetables, cheese and a cup of coffee and a hearty quick breakfast is ready.
Lubricate a microwave-safe mug with oil on the inside.
In a bowl, beat the eggs with a fork.
Add cottage cheese, chopped onions, cheese, salt and pepper. Stir.
Pour the mixture into the prepared mug.
Microwave at full power for 30 seconds. Then stir and cook for another 30 seconds.
Stir again and bake for 45-60 seconds, until the omelet sets.
The finished omelet can be sprinkled with slices of tomato and avocado, black pepper and grated cheese.
