Try the eggplant rolls with chicken, herbs and tomatoes. This cold appetizer will turn out to be tender, aromatic and juicy.
Boil chicken fillet until tender in about 20-25 minutes, cool and chop.

Combine chicken with mayonnaise, salt, spices, and chopped herbs.
Leave some mayonnaise for garnish.
Cut the eggplants lengthwise into thin slices. Sprinkle with salt and leave for 5-10 minutes. Then rinse and pat dry with paper towels.
Heat the oil in a skillet and fry the eggplant for a few minutes on each side to keep it soft and golden brown. Cool it down.
Cut the tomatoes into slices.
Place chicken and tomato slices on each eggplant slice. Wrap in a roll. Make a net of mayonnaise on top.
