Zucchini caviar with mayonnaise is a delicious and very appetizing preparation that keeps well during the winter. Try it yourself.

Ingredients
- Zucchini 6 kg
- Vegetable oil 220 ml
- Onion 1 kg
- Tomato paste 500 g
- Mayonnaise 500 g
- Vinegar 9% 4 tbsp. spoons
- Salt 2 tbsp spoons
- Sugar 4 tbsp. spoons
- Ground red pepper ½ tsp. spoons
Cooking method
Peel the zucchini, cut into medium chunks and simmer in a large saucepan until tender, about 15 minutes. Then drain the liquid.
Heat oil in a frying pan and fry the chopped onion for 7-8 minutes, stirring constantly.
Put the onion in a saucepan with zucchini and beat everything with a blender.

Add tomato paste, mayonnaise, vinegar, salt, sugar and pepper to the resulting puree.
Use fatty mayonnaise.

Boil the caviar for about 2 hours over low heat, stirring frequently so that nothing burns.
You can cook in a multicooker in the "Stew" mode.

Arrange the prepared caviar in sterilized jars. Close the lids and let cool. Store in a cool place.
