Pumpkin caviar for the winter is an interesting and appetizing snack with a bright aroma. Great with meat dishes or as a spread on bread.
Grate pumpkin and carrots on a coarse grater. Finely chop the onion and bell pepper.
Place vegetables in a saucepan, add oil and simmer over medium heat for 5-7 minutes, stirring constantly.
Add tomato paste, sugar, salt and black pepper. Leave on fire for another 30 minutes. Throw in the garlic, passed through a press 10 minutes before cooking.
Grind vegetables with a blender and stir in vinegar. Bring to a boil again and remove from heat.
Divide the pumpkin caviar into sterilized jars (6 pieces of 500 ml) and cover with lids. Store cool after cooling.
