Zucchini caviar with tomato paste is a delicious appetizer that will be a great addition to sandwiches. Prepare it for the winter ahead.

Ingredients
- Zucchini 3 kg
- Carrots 4 pieces
- Onion 4 pieces
- Garlic 7 cloves
- Vegetable oil 150 ml
- Tomato paste 350 g
- Salt 1 tbsp the spoon
- Ground black pepper to taste
- Sugar 1 tbsp. the spoon
- Vinegar 9% 3-4 tbsp. spoons
Cooking method

Peel the zucchini and cut into small pieces, about a centimeter long.
Choose young zucchini.
Grate the carrots on a coarse grater, finely chop the onion and garlic.
Heat the oil in a skillet over medium heat and fry the carrots and onions for 6-7 minutes.
Add the zucchini with tomato paste, garlic, salt, pepper and sugar to the same skillet. Simmer for 45 minutes, stirring occasionally.
Grind the softened vegetables with a blender and bring to a boil again. Toss with vinegar.

Put the hot caviar in sterilized jars and cover with lids. Store in a cool place after cooling.
