Eggplant rolls with tomato, pepper and cheese

An appetizing snack filled with fried vegetables and melted cheese. Hot eggplant rolls with cheese are delicious and aromatic.

Ingredients
- Eggplant 2-3 pieces
- Salt to taste
- Vegetable oil 5 tbsp. spoons
- Carrots 2 pieces
- Bulgarian pepper 1 piece
- Tomatoes 1-2 pieces
- Ground black pepper to taste
- Hard cheese 150 g
Cooking method
Cut the eggplants lengthwise into thin slices. Sprinkle with salt and leave for 5-10 minutes. Then rinse and pat dry with paper towels.
Heat 2 tablespoons of oil in a skillet and fry the eggplants for 2-3 minutes on each side.
Grate the carrots on a medium grater. Cut the pepper and tomatoes into small pieces.
Heat 2 more tablespoons of oil in a skillet. Fry the carrots for 5-7 minutes.
Add pepper and tomatoes, season with salt and pepper. Cook for another 5-7 minutes. Cool it down.
Grate the cheese on a coarse grater. Toss about ⅔ with grilled vegetables.
Place the filling on the eggplant slices and wrap the rolls. Place in a mold greased with the remaining oil.
Bake for about 15-20 minutes at 180 ° C. Sprinkle with the remaining cheese 5 minutes before cooking.
