Eggplant and cucumber salad for the winter - Lifehacker

Very tasty preparation for the winter from vegetables in tomato juice. Eggplant and cucumber salad will be a great addition to any side dish.

Ingredients
- Eggplant 1 400 g
- Salt 2 tbsp spoons
- Cucumbers 700 g
- Bell peppers 700 g (peeled weight)
- Onions 300 g
- Tomatoes 1 400 g
- Sugar 90 g
- Vegetable oil 200 ml
- Vinegar 9% 70 ml
Cooking method
Cut the eggplants into slices. Sprinkle with half the salt, stir and let sit for 10-15 minutes.
Meanwhile, chop the cucumbers, peppers and onions. Purée the tomatoes using a blender, meat grinder or grater.
Drain the liquid from the eggplant. Rinse well under running water and squeeze.
Pour the tomato paste into a saucepan and place over medium heat. When the tomatoes are boiling, pour the onions into it.
After 5 minutes, place the eggplants, cucumbers and peppers in a saucepan. Stir.
Bring to a boil, cover and cook for 20 minutes. Stir vegetables occasionally.
Add remaining salt, sugar, oil, and vinegar and stir. Cook for another 5 minutes.

Divide the salad into sterilized jars and roll up. Turn over, wrap and cool. Keep cool.
