Zucchini and pepper lecho with tomato paste - Lifehacker

Very aromatic, tasty and moderately spicy vegetable salad. Be sure to prepare such a zucchini lecho for the winter.

Ingredients
- Zucchini 3 kg (peeled weight)
- Bell peppers 5-6 pieces
- Hot pepper 1 piece
- Garlic 2 heads
- Sugar 200 g
- Vegetable oil 230 ml
- Vinegar 9% 120 ml
- Tomato paste 450 g
- Salt 2 tbsp spoons
- Black peppercorns to taste
Cooking method
Peel the zucchini. If the vegetables are old, remove the seeds from them. Cut into pieces or small cubes.
Peel the bell peppers and hot peppers from the seeds. Grind them together with the garlic cloves using a meat grinder.
Place the courgettes and twisted vegetables in a large saucepan. Add sugar, oil, vinegar, tomato paste and salt.
Stir well and leave covered for 3-4 hours.
Bring the mixture to a boil and cook, stirring occasionally, for 40 minutes. For even more flavor, you can throw in black pepper.

Spread lecho in sterilized jars and roll up. Turn over, wrap and cool. Store in a cool, dark place.
