Spicy raspberry jam with agar-agar

Raspberry jam with agar-agar is not just sweet, but spicy, with a slight pungency and incredible aroma. It will perfectly complement cheeses and even meat dishes.

Ingredients
- Raspberry 400 g
- Water 50 ml
- Tarragon 1 bunch
- Garlic 1 clove
- Agar-agar 1 tbsp. the spoon
- Salt 1 pinch
- Ground black pepper 1-2 pinches
- White wine vinegar 50 ml
Cooking method
Sort the raspberries and put them in a saucepan. Add water and put on low heat.

When the liquid boils, add the tied tarragon and the crushed garlic clove. Remove from heat and leave covered for 15 minutes.
You don't need to peel the garlic, rinse well enough.
Remove the garlic with tarragon and rub the raspberries through a sieve into a saucepan.
Mix raspberry juice with agar-agar. Season with salt, pepper and vinegar.
Boil again over low heat and cook for 4-5 minutes. Stir.

Pour the finished raspberry jam into sterilized jars and close the lids. Store cool after cooling.
