Black currant ice cream

A bright refreshing dessert with pleasant sourness and amazing aroma. Be sure to try the black currant ice cream in the fresh berry season.

Ingredients
- Black currant 500 g
- Sugar 150 g
- Whipping cream (at least 33% fat) 300 ml
- Vanilla extract 1 tsp the spoon
Cooking method
Place a wide container with a lid in the freezer while preparing the ice cream mass.
Place the berries in a saucepan and bring to a boil over medium heat. The currants should start to burst and release juice.
Rub the berries through a sieve to remove the skins and kernels.

While the berry mass is still warm, dissolve the sugar in it. Add sand to taste if needed. Cool it down.
For an even more pleasant aroma, you can pour in vanilla extract.
Using a mixer, beat the cold cream into a fluffy creamy mass.
Place the cream in the berry mixture and stir gently.
Transfer to a cold container. Put in the freezer for at least 2 hours to freeze the dessert.
Remove ice cream from the freezer 20-30 minutes before serving. Then it will be much easier to scoop it up.
