Pitted cherry jam

The syrup is cooked separately from the berries, and they are cooked in just a few minutes. Thanks to this, the jam acquires a bright taste of not boiled, but fresh cherries.

Ingredients
- Cherry 1 800 g (weight of pitted berries)
- Sugar 1 800 g
- Lemon juice 2 tbsp spoons
Cooking method
Mix the cherries with 100 g of sugar. Transfer the berries to a colander or sieve and place a bowl underneath. Leave it on for 1 hour.
Pour the juice from the cherries into a saucepan. Add the remaining sugar.
While stirring constantly, bring the syrup to a boil over medium heat. The sugar must dissolve.
Reduce fire. Pour lemon juice into the syrup and cook for 7-8 minutes.
Place the cherries in a saucepan and bring to a boil. Turn off the stove and remove the froth from the jam.

Divide into sterilized jars and roll up with sterile lids.
