This dish combines a seafood cocktail with tomatoes, bell peppers and pickled onions. The seafood salad is delicious and light.
Chop the onion and place in a small bowl.
Add ¹⁄₂ teaspoon salt, sugar, vinegar, and boiling water. Stir and let sit for 15 minutes.
Meanwhile, cut the peppers into small pieces. Cut the cherry in half.
Drain the seafood cocktail and onion. Place the tomatoes, peppers, seafood, and onions in a bowl.
Add salt, chopped herbs, oil and lemon juice and stir.
