Even frozen spinach can be used to make this delicious omelette in a skillet. You can serve it with your favorite sauce and fresh bread.
Grate the cheese on a medium grater. Cut the onion into small pieces. Chop the spinach.
Beat eggs with salt and pepper. Then add sour cream with cheese and stir again.
Heat oil in a skillet over medium heat. Fry the onion for 4-5 minutes.
Add spinach to the skillet and continue cooking for a few more minutes. If using frozen spinach, fry until the moisture evaporates.
Pour the beaten eggs over the spinach and onion. Cook for about 5 minutes.
Turn off the stove, cover the omelet with a lid and let it rest for 7-10 minutes.
